Carrot Cake Bites
Delicious, super easy to make carrot cake bites! These vegan bites are excellent for breakfast, dessert, or a snack!
- 1 1/4 cup soft dates
- 1 cup rolled oats
- 1/2 cup shredded carrots
- 1/2 cup shredded coconut
- 1/4 cup pecans
- 2 tsp vanilla extract
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground nutmeg
In a food processor, blend all of the ingredients for about 2 minutes until everything is well combined.
Form into balls and serve immediately or store in the fridge until serving. Enjoy!
