Cashew Sour Cream

Ingredients:

  • 1 cup soaked unsalted cashews
  • 3/4 cup water
  • 1/4 cup apple cider vinegar
  • 2 tbsp lemon juice
  • pinch of salt

 

Directions:

  1. Soak cashews. If you have a powerful blender such as a vitamix, don’t need to soak the cashews. If you have a regular blender, you will need to soak for at least 6 hours or overnight. Tip: Soaking in boiling water helps to speed up the time.
  2. Drain cashews and add all ingredients to blender. Blend until smooth and white. Add more apple cider vinegar or lemon juice if desired. Store in the fridge in a container with a tight seal, or in a mason jar.
